Ingredients for Bulgogi (serves 4-6)
Total prep time before logging in: 20 minutes
Total cooking time: 40 minutes

Ingredients for the Bulgogi:
▢ 4 scallions washed and dried ※
▢ 2 boneless ribeye or sirloin steaks well-marbled frozen in saran wrap for 2 hours ※
▢ ½ teaspoon black pepper
▢ 3 Tbsp soy sauce
▢ 1 Tbsp sesame oil
▢ 2 tsp toasted sesame seeds ※
▢ 2 Tbsp agave (traditionally with brown sugar)

Ingredients for the marinade:
▢ 1-2 RIPE washed and peeled pears (1 Asian or 2 Bosc) ※
▢ 4 garlic cloves peeled ※
▢ ½ large onion or one small onion
▢ 1-inch piece of ginger

Ingredients for the pickled daikon:
▢ ½ daikon radish washed and cut in ½ inch rounds※
▢ 10 jalapenos ※
▢ 2 Tbsp sugar ※
▢ 1/3 cup tamari sauce
▢ 1/3 cup rice vinegar
▢ 1/3 cup water

Utensils needed:
▢ rubber spatula
▢ cutting board and knife
▢ medium size bowl
▢ zip lock bag
▢ food processor
▢ small sauce pan

Directions for meatballs and sweet potatoes

  1. Preheat oven to 425 F. (Shelves should be top and bottom 1/3 of the oven. Line two sheet pans with parchment paper.

  2. Bake sweet potatoes on a lined sheet pan on lower shelf 40-45 minutes or until skin wrinkles.

  3. Mix all the spices for the lamb. ※

  4. Soak the raisins in water for at least 10 minutes then drain. ※

  5. Mix with oats and flax meal (3 Tbsp oats, 3 Tbsp flax).

  6. Add spices to lamb, along with oats, flax and grated garlic clove. Mix with hands (I use latex gloves). Use scooper to form balls and place onto second lined sheet pan

  7. Bake meatballs on upper shelf 12-15 minutes or until browned

  8. Spread yogurt mix on plate(s) for serving, then drizzle pesto on top of yogurt

  9. Break sweet potatoes when cool enough to handle and place on top of the yogurt on half the plate. Add meatballs to the other half and top them with the cucumber fennel salad
