Bombin’ Ramen
sugar-free, gluten-free, dairy-free

Ingredients (serves 4)
▢ 2 T olive or coconut oil
▢ 1 pound of ground pork or turkey (firm tofu for vegetarian)
▢ Two-inch (5 cm) knob of fresh ginger grated (peeling is not necessary if fresh) ※
▢ 6 cloves garlic peeled and sliced ※
▢ 1 medium sized onion (we will cut together)
▢ 2 Tbsp white sugar (can substitute another sweetener)
▢ 2 Tbsp. tomato paste
▢ ¼ c tamari, liquid aminos or dark soy sauce ※ (soy sauce is NOT GF)
▢ ¼ c rice vinegar ※
▢ 1 c water ※
▢ 1 Tbsp. chili paste (like sambal oelek) or 1-2 tsp dried chili pepper flakes
▢ 3-4 nests of Top ramen noodles or (for GF I like japchae sweet potato noodle or rice noodles from Lotus Kitchen)
▢ 2-4 eggs (1 per person)
▢ thai basil, regular basil or cilantro

For furikake condiment:
▢ 1 Tbsp. toasted sesame seeds ※
▢ 4 small sheets nori roasted seaweed snack cut in fourths ※
▢ ¼ tsp sea salt
Blend all ingredients in a blender into a shakable consistency
Utensils needed
▢ large skillet or wok
▢ knife and cutting board
▢ medium pot for ramen (filled with 4 inches/12 cm of water) ※
▢ 1 cup measurer and spoon measurer
▢ mortar & pestle or microplane (for garlic and ginger)
▢ blender for furikake (made in class)
Directions
Heat the oil in skillet on medium, add the meat and break it up. To brown it, leave on one side without stirring for about 5 minutes. It won’t be cooked through.
Move meat to the side of the skillet and add onion, then ginger and garlic. Sauté until onion is translucent about 3 minutes then mix the meat together with the onion mix.
Stir in the tomato and chili paste for 30-60 seconds til darkening. Then add soy sauce, vinegar and water to deglaze the pan. Stir and lower heat when it starts to boil.
Simmer 20 minutes until reduced. Turn heat off after 20 minutes.
While it simmers, boil your water for the noodles. Boil the noodles 3-4 min according to the package until al dente then remove using tongs (SAVE THE WATER!) and add the noodles to the sauce and let it come to a simmer so the noodles can absorb the flavor of the sauce and finish cooking. Use the same pot and water for the eggs.
Boil the eggs for 7 minutes exactly for jammy. Top eggs with furikake.
